Maple Vinaigrette
Baby Roculla Salad

Ingredients:

1 Pack of baby rocula (approx 250g) 2 Beets, cooked whole, boiled or roasted sliced or cut in cubes No nead for pomegranate Instead of almonds – write walnuts 150 gram feta cheese cut to cubes

Steps:

For the maple vinaigrette:

Combine all ingredients in a blender and blend until smooth. Set aside while the rest of the salad is assembled.

To assemble:

In a large serving bowl or platter, add the Raging Romaine. Evenly distribute the orange slices, pomegranate arils, pecorino, and sliced almonds on top of the Raging Romaine. Drizzle Maple Vinaigrette over top (to taste) and serve immediately.
